When you eat
carbohydrates, the end product of digestion is the simple sugar
glucose. When the amount of glucose entering the bloodstream is
not excessive, it can all be used by the cells as fuel. Glucose
is carried into the cells by insulin which is manufactured by
beta-cells in the pancreas.
There are two places where sugar
metabolism can go awry. If the pancreas produces insufficient insulin
then sugar cannot enter the cells (Type 1 diabetes). If the cells do
not respond to insulin then sugar cannot enter the cells (Type 2
diabetes). Either way, the amount of sugar in the blood becomes
excessive and begins to cause damage.
Blood sugar can be high
because we have eaten too much sugar, or it can be high because the
body cannot metabolize the sugar properly. This is why the test for
diabetes uses "fasting blood sugar" to eliminate the possibility that
high blood sugar is due to something we recently ate.
More than 90% of people with
diabetes have Type 2 diabetes.
Diabetes is rare in some countries
and skyrocketing in others. In the United States, both types of diabetes
are rising rapidly, and it is estimated that 30 to 40% of American
children born today will get diabetes.
Diabetes is one of those diseases
where official medicine says "the cause is unknown" and "there is no
cure". Like cancer
and heart disease, you are on
your own. Genetics may play a role, but diabetes has skyrocketed in the
past few decades while our genetics has not changed. For the prevalence of a disease to grow so quickly,
there must be some fundamental problems with our diet and lifestyle. Diet and lifestyle are things we can do something about.
Get Some Sun
Finland is so far north
that it receives very little sun in the winter. Finland has the
world's highest rate of Type 1 diabetes. Children in Finland who
were given 2,000 IU of vitamin D daily during the first year of
life had a 78% reduced risk of Type 1 diabetes. Diabetes is rare
in equatorial regions. Lack of vitamin D is associated with both
Type 1 and Type 2 diabetes. People with Type 2 diabetes
generally have low levels of vitamin D. Vitamin D improves

combating health problems such as such as heart disease, obesity, chronic fatigue,
autism, Alzheimer's and multiple sclerosis.
The body will not make from sunlight more vitamin D than it
needs, so we suggest taking the oral supplements and let UVB light top up
vitamin D so that the body has all it wants.
However, a companion
nutrient to vitamin D is vitamin K2.

In order to study Type 1 diabetes
in the laboratory, scientists create Type 1 diabetes in experimental
animals by feeding them certain toxic substances that destroy the

called alloxan, which just happens to be added to white flour during its
manufacture. We do not suggest that alloxan is responsible for all Type
1 diabetes. More likely, there is a combination of factors involved, of
which alloxan is one. However, if you need a reason to avoid eating
white flour, this is a good one. Another reason to avoid white flour is
that it contains bromide, which
interferes with iodine in the body. Iodine is important to your thyroid
gland which regulates your metabolic rate. Metabolic rate, insulin and
diabetes are all related because your metabolism runs on fat and

In a recent report from the
American Journal of Clinical Nutrition (June 2001), researchers from the Harvard School of Public Health studied the relationship of types of fat to the risk of type-2 diabetes development. They prospectively (a superior "type" of study) followed over 84,000 women aged 34-59 years with no diabetes, circulatory disease, or cancer beginning in 1980 and followed them for over 14 years. The study revealed that simply substituting two percent of energy from trans-fatty acids with natural polyunsaturated fat (butter) could reduce the incidence of diabetes by a whopping 40 percent! Cells can use either
glucose or fats as fuel. It will be difficult for type II
diabetics to lose weight because fat transport across cell
membranes is also impaired.

chemical used in cosmetics. Nitrates are a chemical used to give
preserved meats (hot dogs, bacon, etc.) a pink color. Nitrosamines are

Magnesium is the fourth most abundant mineral in
the body, yet it receives little or no appreciation. 80% of Americans
may be magnesium deficient. Magnesium is needed by more than 300 enymes
in the body, and there are thousands of magnesium binding sites in the
body indicating that it has a widespread and significant role to play.
Magnesium helps prevent type 2 diabetes.
The potassium supplement we
recommend is 1/2 to 1 level teaspoon of potassium bicarbonate in water
daily. One level teaspoon of potassium bicarbonate should give you about
2 grams of potassium. The magnesium supplement we recommend is called "Enzymatic

Diabetes is associated with a
deficiency of vitamin C. According to
Dr. Thomas Levy, page 68, vitamin C is involved in the synthesis of
insulin and in regulating the release of insulin. High blood sugar
and/or low serum insulin interfere with the cellular uptake of vitamin
C. Dr. Levy writes that supplementation with vitamin C is extremely
important for diabetics and may help prevent many of the negative
impacts of diabetes on the body. Scurvy causes "pre-diabetes" and
supplementation with vitamin C generally corrects this situation. See
Levy pages 121-131.

Another factor is undoubtedly
stress and fatigue of the beta-cells. There once was a time when people
ate very little sugar. Refined foods (white sugar, white flour, white
rice) were for the rich. Today the average American eats his/her weight
in sugar each year. The pancreas must find this exhausting. How could it be
otherwise? It is absurd to be eating so much sugar and then blame the
body for the inability to handle it. Just as eating too much salt
overtaxes the ability of the kidneys to remove excess salt, so too does
eating too much sugar. Just as excess salt can back up into the system
and cause edema, so does excess sugar back up into the system and also
cause edema. Edema is swelling in the tissues caused by retention of
water as the body tries to dilute the excess salt and sugar. The
pressure created by edema is one of the causes of nerve damage
(neuropathy) associated with diabetes. The overtaxing of the kidneys is
one of the reasons why diabetes causes kidney damage. Excess sugar
also damages blood vessels leading to heart disease, feeds cancer
premature aging. Is it too much to ask for people to eat less sugar?
One level teaspoon of table sugar contains 4
grams. You can use this information when reading packaged food labels.
American Heart Association
recommends a maximum consumption of 6 teaspoons of sugar a day
for women and 9 teaspoons a day for men.
For example, a package of cookies may say there
are 24 grams of sugar per serving of one cookie. So one cookie contains
6 teaspoons of sugar. This means a woman can eat one cookie per day, and
a man can eat one and one half cookies per day. After eating their
cookie, neither can eat anything else with added sugar that day.
This recommendation is for "added" sugar and does not count sugars that
are naturally present in foods.
"Added" sugar includes sucrose, cane sugar, raw sugar, brown sugar,
molasses, maltose, fructose, syrup, corn syrup, high fructose corn
syrup, honey, etc.
If you want to sweeten a food, add fresh or dried fruit (raisins), or
food companies use M.R.I. (magnetic resonance imaging) scans of the
brains of test subjects to see when the "pleasure centers" of the brain
become active in response to eating a product. The company adjusts the
sugar, salt and fat content of the food to maximize the response (the
"bliss point"). In other words, foods are being designed as addictive
drugs in order to maximize sales, regardless of the effect on your
health. This is why commercially prepared foods contain far more sugar
than home-made foods. This why you cannot eat just one potato chip.
Eating excess sugar can
damage the kidneys. Many drugs damage the kidneys. The
phosphoric acid in cola drinks damages the kidneys. As the
kidneys become damaged, it is even more difficult for the body
to remove excess sugar. The resulting higher blood sugar
accelerates the damage to the kidneys creating a vicious cycle. Damage to the kidneys
begins many years before diabetes is diagnosed.
A small amount of sugar
helps the food go down. Too much sugar displaces the food and
leaves you with a starving fat body.
Glycation End Products (AGEs)
Within the body, an advanced glycation end product is the result
of an unhealthy chemical reaction between sugar and protein or
lipids in the absense of enzymes. AGEs can
affect nearly every type of molecule and cell in the body. AGEs
cause "cross-linking", which is a scientific way of saying that
they gum things up. AGEs are proinflammatory and associated with
various inflammatory diseases. AGEs cause the production of free
radicals, which in turn create more damage. High blood glucose
promotes the formation of AGEs. Fructose in the blood produces
ten times more AGEs compared to glucose.
The formation and accumulation
of AGEs contribute to the creation of plaques in the body. AGEs
are associated with Alzheimer's Disease, arthritis, asthma,
atherosclerosis, cardiovascular disease, cataracts in the eyes,
diabetes mellitus, kidney damage, myocardial infarction,
nephropathy, neuropathy, periodontitis, reduced muscle function,
retinopathy, and stroke. The cross-links created by AGEs cause
problems in both microcirculation and macrocirculation.
Cross-linking reduces flexibility and increases stiffness
throughout the body. The AGEs and free radicals contribute to
the general decline in health associated with "aging".
AGEs are also absorbed into the body from food and cause
AGE-related tissue injury. When food is
exposed to heat during cooking,
it is the formation of AGEs that cause the cooked food to turn
brown. The browning is associated with denaturation and
cross-linking of proteins, particularly lysine and arginine.
Higher cooking temperatures and longer cooking times cause
increased formation of AGEs. Dietary AGE restriction reduces
serum AGE levels.

Learn About the Glycemic
Eating a refined food
(sugar and starch) snack or meal causes blood sugar to soar. The
result is the production of a massive amount of insulin by the
pancreas, which causes blood sugar to plummet and then you feel
intensely hungry, even though you ate just a short while before.
This is why people who eat high glycemic index meals eat more
often and tend to become
obese. For a more stable blood sugar, you need to eat
complex carbohydrates that take longer to digest and so create a
moderate rise in blood sugar over a prolonged period of time.
This is much easier on the pancreas. Complex carbohydrates are
in vegetables, legumes, whole grains and fruits. Better yet,
sprout your grains and legumes and
eat the sprouts. This is the
same diet we recommend for
cancer and heart disease. Soft drinks,
sugary fruit drinks, and refined grain products (white flour,
white rice) are digested quickly and lead to wide swings in

for energy is stored in the liver as glycogen. When the liver has enough
glycogen, it starts converting glucose to fat.
Sucrose sugar breaks down
into glucose and fructose. The glucose is carried into cells by
insulin to be burned for energy, or it is stored as glycogen. The fructose is converted to
fat. Fructose sugar does not
stimulate an insulin response. Instead it goes directly to the
liver where it is converted to fat. Animals that hibernate
create their enormous fat stores by this mechanism.
One of the causes of the
present epidemic of obesity is high fructose corn syrup (HFCS).
HFCS is cheaper than sugar and is found in manufactured food
products in great quantities. "Unlike table sugar, HFCS doesn't
trigger the release of leptin, the substance that makes you feel
full and stop eating. Worse still, it doesn't suppress the
release of ghrelin, the substance that makes you hungry." - Dr.
David Williams. If you want to control your weight, it is
absolutely necessary to avoid any products that contain high
fructose corn syrup. HFCS is a manufactured product that first
entered the food supply in the 1970's. More than any other food,
HFCS is responsible for the obesity epidemic. High fructose corn

Stress causes the adrenal glands to
